Ingredients:

  • 1 lb (0.5 KG) boneless chicken thighs, cut into bite-sized pieces
  • 2 cups basmati rice
  • 3 cups water
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 inch piece of ginger, minced
  • one cup of various vegetables (carrots, peas, bell peppers)
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 2 tablespoons oil
  • 2 tablespoons ghee or butter
  • 2 bay leaves
  • 2 cinnamon sticks
  • 3-4 green cardamom pods
  • 2-3 cloves
  • 1/4 cup of yogurt
  • 1/4 cup of milk
  • 1/4 cup of chopped cilantro
  • 1/4 cup of chopped mint

 

Instructions:

  1. Rice should be rinsed multiple times in fresh water until the water is clear. Soak the rice in water for 30 minutes.
  2. In a large pot or Dutch oven, heat the oil over medium heat. Cook the onion after adding it until it turns golden brown. Add the ginger and garlic thereafter, and sauté for an additional minute.
  3. The chicken should be cooked until no longer pink, stirring occasionally. Then add the mixed vegetables and cook for another 2-3 minutes.
  4. Add the cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Cook the spices for a further 2 to 3 minutes, or until they are aromatic.
  5. Add the water, bring it to a boil, then reduce the heat to low. Add the soaked and drained rice.
  6. Add the yogurt and milk, and stir gently to combine. Add the cloves, cardamom pods, cinnamon sticks, and bay leaves.
  7. Cover the pot and cook on low heat for 18-20 minutes, or until the rice is cooked and all the liquid is absorbed.
  8. Once the rice is cooked, turn off the heat and let it sit for 10 minutes. Then use a fork to fluff the rice.
  9. Melt the ghee or butter in a pan and pour it over the rice. Sprinkle the chopped cilantro and mint over the rice.
  10. Serve the chicken biryani hot with raita or chutney.

By following these simple steps, you can easily make delicious chicken biryani at home.
